So I have to make a meal out of bok choy, celery, green beans and garbanzo beans. Should be interesting.

One of my favorite ways to use up garbanzo beans is to heat up a little oil in a skillet, and toss until they’re crispy on all sides. I usually eat mine with wilted spinach but I bet wilted bok choy would be delightful too.
